Chicken Tortilla Soup Recipe:

Ingredients:

3 1/2 tablespoons olive oil
4 6-inch corn tortillas, cut into 1/4-inch strips
1 clove garlic
1 jalapeno chile, seeds and ribs removed
1/2 green pepper
2 ripe avocados- peeled and pitted
1 tablespoon lime juice
3 1/2 cups water
1 1/2 teaspoon salt
1/4 teaspoon back pepper
1 teaspoon chili powder
1 onion, chopped
3 cups low-sodium chicken broth
2 ( 8 ounce) cans tomato sauce
1 pounds boneless, skinless chicken breast (about 3), cut into strips * I used a rotisserie chicken to save time

Instructions:

1. In a large pan, heat 2 tablespoons of olive oil. Add the tortillas and cook until brown and crisp, 3 to 4 minutes. Remove the tortillas from the pan and drain on paper towels.

2. Combine and blend garlic, jalapeno, green pepper, avocados, lime juice, 1 1/2 cups of water, tomato sauce, teaspoon of chili powder, salt and pepper. Puree until smooth.

3. Heat the remaining 1 1/2 tablespoons of olive oil in a pot over moderate heat. Add the onion, stirring frequently, until translucent, about 5 minutes. Add the broth and the remaining 2 cups of water and salt. Bring to a simmer.

4. Stir the chicken into the pot, cook until just done. After about 15 minutes, remove the chicken breasts and shred. Return the shredded chicken to the pot and simmer for an additional 45 minutes. Add the avocado puree. Heat through, about 10 minutes. Serve the soup topped with the crisp tortilla strips. Dice Avocados and sprinkle over the top of the soup.

3/4 Cup Sugar
1 teaspoon Vanilla
Beat until White then add:
3/4 cup milk
5 Tablespoons of Flour
