Mexican Meatballs/Albóndigas :

INGREDIENTS
1) 2 lbs of Ground Turkey or Beef
2) 2 eggs
3) 1 onion
4) 1/4 Small Bowl of White Rice
5) Salt, Onion Salt, and Garlic
6) 2 Zucchinis
7) 3-4 Carrots
8) 1 peeled potato
9) Olive Oil
10) 1 pitcher of water

Turkey Meatball Prep in First Bowl :
1) 2 lbs of Ground Turkey or Beef
2) Crack 2 Eggs into the bowl
3) Chop up 1/4 of an onion into small pieces
4) Add salt, onion salt, garlic at your preference
5) Stir all of it together
6) Add 1/4 small bowl of white rice to the mix after you stir (add more rice until the mixture is more solid)

Vegetable Prep in a Second Bowl:
1) Slice up 2 zucchini's and put in an empty bowl
2) Dice up 2-4 carrots depending on serving size, add to the veggie bowl.
3) Slice up 1 peeled potato and add it to the bowl

Meatball Making, return to the First Bowl:
1) Add a little water to your hands so the meat doesn't get stuck
2) Try to make the meatballs as small if possible in circles
3) Add more rice if the meatballs are hard to mold
4) Make as many circular meatballs as you can

Vegetable Prep in a high pan:
1) Add olive oil on low heat
2) Put the vegetable bowl onto the pan, stir lightly

Sauce Making Prep in a Blender (while the veggies simmer):
1) Put 3 tomatoes into a blender
2) Put 1/4,1/2 or 1 chipotle pepper in the blender depending on your sensitivity to spice (OPTIONAL)
3) Add about 1/2 a blender full of water
4) Add salt and garlic
5) Add one piece of onion
Check on the vegetables cooking on low heat, stir them a little

Blend the Sauce for 10-15 seconds. Try the sauce. If it's too spicy, add 1 more tomato and re-blend.
If it's not spicy enough, add more chipotle.

Dump the sauce into the pan. Keep the heat low.
Add more water to the pan, until it becomes soup like.
Optional: Put a few pieces of Cilantro into the broth.

Put each turkey meatball into the broth carefully. Use a spoon if you want to be more cautious.
Stir the mix gently in a circle. Cook on low heat for 10-15 minutes.

Cut one piece of meatball to make sure it's fully cooked after 15 minutes. Add extra time if necessary.
