He’s 94 years old and makes the best sushi in the world. If you are true Asian food lovers, you have probably heard of Jiro Ono and his Sukiyabashi Jiro, a three-star Michelin Japanese restaurant. Despite its fame, this place is not located in a famous square or street in Tokyo but inside the Ginza subway station, and has only 10 seats. Actually, Jiro prefers not to focus on the appearance, but rather on the quality of his products. "To me, sushi is real art, it's not just about combining rice with raw fish" [Jiro Ono]. Clearly, art has to be nurtured since childhood and Jiro made his way in the world of sushi at only 9 years of age, always seeking the perfection that led him in 2008 to enter the Guinness World Records as the oldest three-Michelin star chef in the world. Despite his age, Jiro continues to make sushi with his own hands, making sure, above all, that the fish is always fresh so that he can offer his customers a unique and unforgettable experience. His eldest son, Yoshikazu, is responsible for the quality of the products and goes to the market every morning to select the freshest fish. Even the youngest son worked alongside his father for years before opening his own business, that can be considered a branch of his father's restaurant. "I like the idea of passing this art on to my children. But there are no concessions or gifts. The credit must be hard-earned"[Jiro Ono]. Achieving his skill level is not easy. If we want to try, we must undertake an apprenticeship of at least 10 years, consisting of increasingly difficult tests such as being able to wring out a hot cloth after getting our hand burned or massaging an octopus for 50 minutes to soften its skin. Even Obama called it ‘the best sushi in the world’ when in 2014 he tried it for the first time and was pleasantly surprised. Even though a full meal in this restaurant costs at least $230, the place is never empty as everyone is curious to taste Jiro’s recipes, which are considered real works of art.
