Pecan Pie Tarts Recipe
Ingredients:
For the dough
1 stick softened butter - 125 grams or 8 tbsp
1 tbsp olive oil
1 tbsp yogurt
1 tsp vanilla
1/3 tsp salt
3 tbsp powder sugar
1 1/4 cups flour
For the tart filling
1.5 cups crushed pecans (you can use walnuts too)
4 tbsp regular sugar
2 eggs
1 tbsp cinnamon
Preparation:
In a medium or large bowl mix all wet ingredients for the dough. Add powder sugar and flour and mix again until you have a nice soft dough. Let dough sit for 10-15 min.
Meanwhile whisk the eggs for the filling in a separate bowl. Add all other ingredients and mix well.
Get your tart molds out. I used molds that are size M (1.5 inch diameter on the bottom and 2.2 diameter on the top). You do not have to grease the molds - the dough has enough butter. Get a small ball of dough and push it inside a mold against the walls until you get a nice tart that looks like a pie shell on the bottom of the mold. Make sure your tarts are not too thick but also not too thin. Repeat the process until you run out of dough.
Fill up a tart with about 1 tbsp of the pecan mixture. Repeat filling all tarts until you run out of mixture. You can redistribute some of the mixture if you have empty tarts at the end. Bake on 375 F degrees for 15-20 min until the dough is golden brown. Once the tarts cool off, take out of the molds, place them in a pan of your desire and sprinkle with a little bit of powder sugar on top. Enjoy.
