Serves 2
Syns per serving - FREE

750g new potatoes, scrubbed and halved
2 garlic cloves
1 tbsp chopped fresh thyme
600g trimmed asparagus spears
2 boneless rainbow trout fillets
1 lemon
300g cherry tomatoes

Preheat the oven to 220°c / fan 200°c / gas 7
Spray a large non stick baking tray with low calorie cooking spray and add the potatoes, 1 of the crushed garlic cloves and half the thyme. Season with salt and pepper and roast in the oven for 15 minutes.
Add the trimmed asparagus spears to the baking tray and roast for a further 5-6 minutes.
Rub the trout fillets with lemon juice, remaining garlic and thyme and lay on top of the asparagus, skin side down.
Scatter the tomatoes around the fish and roast for a further 8-10 minutes until the vegetables are tender and the fish is cooked through.
