Description

This decadent ube chiffon cake is made with purple yam or the signitured vibrant purple color ube halaya. Soft, fluffy ube cake with whipped cream, cream cheese filling in between. Along with chunks of ube halaya on top and covered with ube cake chunky crumbs. Today, let me share with you how I make my own version of this famous ube cake.

Ingredients:

FOR DRY INGREDIENTS
2 cups cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup white sugar

FOR WET INGREDIENTS
8 egg yolks
1/2 cup vegetable oil
3/4 evaporated milk
1/2 cup ube halaya
2 tbsp ube powder
2 drops of violet gel food color

FOR MERINGUE

8 egg whites
1 tbsp vinegar
1/2 cup white sugar

FOR THE FROSTING

500 grams whippit
226 grams cream cheese
1/2 cup cold milk
2 tsp vanilla

For this recipe, I used two 6 inches cake pan and one 7x3 loaf pan that I used for the crumbs. Bake in a pre-heated oven at 175c for 45-50 minutes.
