Fanesca is a lent tradition in Ecuador. It's available in the weeks leading up to Easter. The stew is packed with hearty grains, empanadas, bananas, egg, and more. It's usually eaten on Good Friday. I headed to an old school restaurant in Quito for a bowl of the delicious stew. It was my first time trying it, and the traditional Ecuadorian dish really surprised me.
