Description

GREEN GARLIC THECHA

Ingredients

½ medium bunch fresh green garlic
4 tbsps oil
10-12 light green chillies
¼ cup raw peanuts
Sea salt to taste
Bhakris
1 cup rice flour
1 tsp ghee
Salt to taste

Method

1. Roughly chop green garlic.
2. Heat oil in a kadai, break green chillies and add, sauté on high heat for 2-3 minutes. Add raw peanuts and sauté for 1-2 minutes.
3. Add chopped green garlic, mix and sauté on high heat for 2-3 minutes. Add sea salt, mix and cook for a minute. Take the kadai off the heat and allow the mixture to cool to room temperature.
4. Transfer the cooled mixture into a mortar and pestle, coarsely grind and set aside until use.
5. Meanwhile, boil 1 cup water along with ghee and salt in a non-stick deep pan, add 1 cup rice flour, mix and continuously stir till well combined. Sprinkle water, switch the heat off, cover and set aside for 1 minute.
6. Transfer the rice flour dough into a parat, knead with the back of a small stainless steel bowl till it cools slightly. Knead the dough again with your hands till smooth. Cover with a damp muslin cloth.
7. Divide the dough into equal portions, shape each portion into a ball. Dust the worktop with rice flour, roll each ball into a thin disc.
8. Heat a tawa, place the disc on it, gently apply water on top, cook for 1-2 minutes, flip and cook further for a minute. Take it off the heat and arrange on a serving plate.
9. Serve the bhakris hot with green garlic thecha.
