泰式明爐海鱸魚 Thai Style Steamed Sea Bass - SmartCook 煮見 x HK Saladmaster 煮好餸
Description
泰式明爐海鱸魚
材料:
1. 鱸魚 1條
2. 青檸 1粒
3. 南薑 1塊
4. 檸檬葉 4塊
5. 香茅 2支
6. 辣椒 1
7. 蒜頭 3粒
8. 芫荽 1紮
9. 豬肉碎 100g
10. 水 400ml
11. 椰菜 半個
調味料:
1. 椰糖 1湯匙
2. 魚露 2湯匙
做法:
1. 將魚洗淨印乾,魚肚放入南薑、檸檬葉及香茅。
2. 鍋內舖上椰菜絲,放上魚。中小火煮10分鐘,氣門響起後轉小火
3. 於另一鍋內,白鑊燒熱進行水滴測試,放入豬肉碎炒香,倒入水煮滾
4. 加入南薑,香茅煮10分鐘至出味
5. 於鍋內,放上蒜頭、辣椒及芫荽。加入青檸汁及調味料。
6. 將湯倒入魚中,小火煮滾即可
Thai Style Steamed Sea Bass
ingredient:
1. sea bass 1pc
2. lime 1
3. Galangal 1
4. kaffir lime leaves 4pcs
5. Lemongrass 2 stick
6. Chili 1
7. garlic 3cloves
8. Corinader 1bunch
9. Minced pork 50g
10. Water 400ml
11. cabbage 1/2pcs
seasoning:
1. Coconut sugar 1tbsp
2. Fish sauce 2tbsp
Method:
1. Wash and pat-dry the fish. Put lime leaves, galangal and lemongrass into cavity of the fish
2. Place the cabbage in pan, and fish on top. Cook for 10mins over med-low heat, turn to low-heat after valve clicks
3. In other pot, heat it up, do the water test, add the minced pork and sauté, and pour in the water and bring it to boil.
4. Add galangal, lemongrass and cook for 10 minutes
5. Add in garlic, lime leaves and chili .add lime juice and seasonings.
6. Pour in the soup, simmer it. serve.
