Best Homemade Fudge EVER! (Phat Cow Fudge) Recipe:
PHAT COW FUDGE
INGREDIENTS:
20 oz. Hershey Milk Chocolate bars (3 giant 7 oz. Hersey Bars)
1 pkg. semi-sweet chocolate chips ( 12 oz. or 1 ½ cups)
1 cup salted butter
4 cups sugar
1 can Carnation evaporated milk
4 cups frozen miniature marshmallows ( 1 large pkg)
2 ½ cups mini marshmallows
1 T. vanilla extract
2 cups chopped walnuts (or pecans)
DIRECTIONS:
Prepare a large baking pan (15x10) by greasing with butter.
Place 4 cups mini marshmallows into freezer until frozen
In a large bowl, place broken up chocolate bars, chocolate chips and butter
In a large pan (not a saucepan) place sugar, evaporated milk and 2 ½ cups of fresh marshmallows.
Bring to a boil over medium heat, stirring constantly, to a light bowl. This may take a few minutes, so do not leave and watch carefully. When mixtures reaches a light bowl, start timing for 7 minutes. Mixture will bubble up to a large boil (hence the need for a deep large pan)
Immediately remove from heat and carefully pour over the bars mixture. With a large wooden spoon, stir and beat until all of the chocolate is melted and starts losing the “shine”. Keep stirring until cooled slightly, and starts losing it’s shine (this may take a few minutes). Stir in vanilla and chopped nuts.
Cool completely and keep in refrigerator in an airtight container until time to cut into small pieces and serve to rave reviews!
