RECIPE:
HOT CROSS BUNS
RECIPE
INGREDIENTS
2 Cups all purpose flour
1 Cup cake and pastry flour
1 Tablespoon instant yeast
2 1/2 teaspoons ground cinnamon
1 teaspoons ground Cloves
1 teaspoons ground Nutmeg
1 teaspoons salt
¾ cup brown sugar
1 cup Lukewarm water
⅓ cup heavy cream or full fat milk
¼ cup unsalted Butter at room temperature,
1 egg
2 teaspoons vanilla / essences
1 ½ cup all purpose flour for dusting and kneading
½ cup raisins
Water to soak raisins
1 ½ cup flour for extra use
SYRUP
1 Tablespoons corn syrup
1 Tablespoons water
FLOUR MIXTURE
½ cup water
½ cup all purpose flour
ICING
1 cup confectioners sugar/ icing sugar
6 teaspoons milk
INSTRUCTIONS
SOAK THE RAISEN FOR 12 HOURS
Cut them into small pieces(set aside)
When ready to make the cross buns
In a large bowl
Measure and sift both flours
Add the salt , cinnamon ,cloves and nutmeg, stir to combine
In a small saucepan
Measure and pour the liquid
Heat on low heat just be lukewarm
Add the sugar and the yeast
Stir to dissolve the yeast and sugar
Add the wet to the dry
Whisk the egg separately
Add it into the dry ingredients
Stir to incorporate
Add the butter and the raisins
Mix with a sturdy spoon ,to form a soft dough
Sprinkle some flour on the work surface and dump the dough out
Knead for 1 to 2 minutes
while adding flour to form a medium smooth dough
Cover with a tea towel and let it rest for ten minutes
When the time is up
Sprinkle a little flour and knead dough and form it into a ball
Rub some oil in a large bowl
Place the dough cover with a tea towel and let it rest in a warm place
To rise
Until it double in size, it should take about 45 to and hour to rise depending on the temperature in your home
When finish rising,
Punch down to get the air bubbles out
Place it on the work surface
Flatten with your hand
Cut into 12 equal pieces and
Shape them a ball
Arrange them 2 inches apart,cover with a tea towel and let it rest for 10 minutes
Form them into a ball again
Grease and lined a large cookie sheet pan and arrange them
Cover with a tea towel
And let them rest in a warm place for 45 minutes or until they are doubled in sizes
Mix the flour and water together into a paste
Put it into a piping bag with a tip on
And pipe a cross on top of them
Or mark them with a sharp knife or blade or clip them with a scissors
Place them on the top rack
Bake the cross buns for 22 to 25 minutes at 325 degrees
Or until they are golden brown
10 minutes before they are finished
Brush them with the glaze
And continue baking until the time is up.
If desire the icing
When they are cold
Mix the icing and pipe it on top
Using a piping bag
TIPS:
Handing a soft dough could be a little tricky,but you will be ok
You may use up to four cups of flour
The cake and pastry flour help with the softness,
Use flour to help the process
It takes time n practice to feel comfortable, plus you will have a soft hot cross bun
You can use a little oil in your hand to
Shape them also
TIME : 2 ½ hours
to make them
Make sure your yeast is good and active
Baking is Science so all depends on the climate and the temperature in your home the results could be vary
In the warm climate dough use less water
In the winter dough uses more water .
You can use all purpose flour instead of the pastry flour, if u don't have any
