Steamed Buns - TESDA Women's Center Easy Step Cooking Recipes

Name : Steamed Buns
Yield : 14 to 16 pcs
Ingredients:
All purpose flour 2.5 cups
Dry yeast 1 Tbsp
White sugar 2 Tbsp
Baking powder 1.5 tsp
Iodized salt ¼ tsp
Warm Water 190 ml
Procedure :
1. Combine flour, yeast, sugar, baking powder and salt. Mix all the ingredients.
2. Pour the warm water to dry ingredients mixture. Mix to incorporate all the ingredients together until it become smooth. Knead the dough until develop the window pane or the dough is elastic and soft but not stick to your fingers.
3. Put the dough in a mixing bowl, cover with plastic wrap or cloth and let it rise until It become double size , about 30 minutes.
4. Place the rise dough on a working table, spread out on a floured working table. Knead the dough for 5 minutes then roll and portion into 10 to 16 parts.
5. Roll out the dough ¼ thick. Sprinkle flour is not necessary but if you do, use a minimum as possible.
6.Brush with oil on one surface of buns and fold in a half moon shape or shell shape. Gently press each buns with a rolling pin and place on a parchment paper lined steamer. Cover with cloth and let it rest for additional 10 minutes.
6. Bring water to boil on a steamer pot. Carefully place the steamer with buns on top of boiling water pot. Make sure the water is not touching the buns. Cover the steamer with lid. Steam the buns over boiling water for 10 minutes.
7. Remove lid before you turn off heat, or else water will drip back onto buns surface and produce yellowish “blisters “ on bun surface. Continue steaming batches of buns until all are cooked.

Yield : 120 ml
Ingredients :
Oyster sauce 3 Tbsp
Brown sugar 2 Tbsp
Soy sauce 1 Tbsp
Vinegar 1 Tbsp
Water 3 Tbsp
Salt ¼ tsp
White pepper ¼ tsp
Chili flakes ½ tsp
Slurry ( 1 tbsp water + 2 tsp)
Procedure:
1. Mix all the ingredients and continue stirring until all ingredients are incorporated.
2. Add slurry at the end and cook in a medium heat .
