Stir Fried Rice with Steak & Vegetables
Serves: 4
Prep Time: 10 minutes (+ cooling time)
Cook Time: 10 minutes

300g Coles Australian No Added Hormones Beef Scotch Fillet Steak
2 tbs olive oil
1/2 cup chopped brown onion
15g minced peeled ginger
4 garlic cloves, chopped
1/2 cup chopped peeled carrots
1/2 cup chopped red capsicum
1/2 cup small broccoli florets
4 kale leaves, stems removed, chopped
1/2 cup snow peas, trimmed, chopped
2 cups cooled cooked brown rice
2 tbs oyster sauce
2 tbs soy sauce
1 tsp sesame oil
4 extra-large Coles Australian Free Range Eggs, fried sunny-side up
Chilli sauce, to serve (optional)

1. Heat a chargrill on medium-high. Add the steak and cook for 2 mins each side for medium rare or until deeply caramelised and cooked to your liking. Set aside to cool. Cut cooled steak into bite-size pieces.
2. Heat a large heavy-based saucepan over high heat. Add the olive oil. When oil starts to smoke, add onions and stir-fry for 30 secs. Add ginger and garlic and stir-fry for 30 secs. Add carrots and stir-fry for 1 min. Add capsicum and stir-fry for 30 secs. Add broccoli and stir-fry for 30 secs. Add the kale and stir-fry for 30 secs. Stir in the snow peas. Add the rice and stir-fry for 1 min.
3. Add the steak pieces to the rice mixture in the pan and stir-fry for 30 secs. Add oyster sauce, soy sauce and sesame oil. Stir-fry for 1 min or until the rice is heated through and mixture is well combined. Season with salt.
4. Transfer the fried rice to a serving platter. Top with fried eggs. Spoon some chilli sauce on top, if using. Serve immediately.
