Hello all! I hope you are staying safe/healthy during this crazy time. I've talked about the situation a lot on my instagram so I don't feel like bringing it here as well, but I'm praying for you all. I hope we return to "normal" soon. Keep your head up and keep staying home!

My dad and I decided to make spam fried rice this week. It's so easy, quick, cheap, and it feeds a lot! Of course, there are ingredients I wish I had to add to this such as green onions. I'm not a veggie gal so I honestly prefer it without peas/carrots but feel free to change this up in whatever way you want! All in all, a great quarantine meal!

INGREDIENTS:
3 cups of cooked rice
1 can of SPAM
6 eggs total (2 per cup of rice)
Cilantro
Any veggies you want to add
1 medium onion
8 cloves garlic
1/4 cup butter
Paprika, Soy Sauce, Black Pepper, Salt

DIRECTIONS:
1. Cook your 3 cups of rice
2. Mince the onion
3. Cube the SPAM
4. Crack all eggs into a large bowl, then season with paprika, black pepper and salt. Scramble. Set Aside.
5. In a large wok/pan, using medium-high heat, put 1/8 of your butter in the pan. Then press in your garlic cloves. Let garlic brown slightly.
6. Add in your minced onion, season with paprika, salt, and black pepper, and saute for 2-3 minutes/until light brown
7. Add in any optional other ingredients such as peas/carrots etc. and then add in your cooked rice
8. Season with 2 rounds of soy sauce, paprika, salt, the other 1/8 cup of butter and black pepper (be careful not to over-do it on the black pepper bc it is a dominant seasoning)
9. In the same pan you cooked your eggs, start cooking the SPAM. It is done when it starts to have dark red/pink sides.
10. Mix well and you're all done! Add some cilantro on top for extra taste. Enjoy!
