INGREDIENTS:
For the cookies:
125 grams (1/2 cup) raw and peeled peanuts
1 tablespoon vegetable oil
200 grams (1 cup) dark chocolate
200 grams (1 cup) digestive biscuit
1 teaspoon powdered milk
1/2 teaspoon instant coffee

For the salted caramel:
20 grams (1/3 cup) granulated sugar
20 grams (1/6) cup) butter, at room temperature
50 grams (1/4 cup) heavy cream
Pinch of salt


DIRECTIONS:
Step 1: Roast the peanuts
1- In a large bowl, mix the peanuts with the vegetable oil until they are completely coated.
2- Place the peanuts on a baking sheet covered with parchment paper and bake in a preheated oven at 180°C (356°F) for 15 minutes until they become slightly golden. Set aside until they cool completely before using.

Step 2: Prepare the peanut biscuit mixture
3- Place the digestive biscuits in a food processor and mix them until they become a fine powder.
4- Place the peanuts in a food processor and mix them until they become a fine powder. Do not over-process so they don't become a paste.
5- In a heatproof bowl, place the dark chocolate. Sit over a pan of barely simmering water (a bain-marie) and allow the chocolate to melt, stirring occasionally using a spatula.
6- Add powdered milk, instant coffee. Stir using a spatula until it melts completely. Remove the bain-marie system from the heat and keep the bowl above the simmering water to prevent the chocolate from hardening.
7- Add the digestive biscuits and peanuts, and mix all the ingredients together with a spatula until well combined.
8- Using a teaspoon, fill a mini savarin silicone mold with the peanut cookie mixture and place in the refrigerator for 1 hour.
9- Fill the center of each cookie with the dulce de leche or salted caramel (see recipe below). Once you fill it up, tap the mold down gently onto your workspace to release air bubbles and bring them to the top.
10- Put it in a tray and place it in the refrigerator.

Step 3: Prepare the salted caramel
1- In a small saucepan over medium heat, melt the granulated sugar until it becomes liquid and takes a golden color.
2- Add the butter and mix with a wooden spoon until it completely melts.
3- Add the heavy cream, salt, and continue mixing for 1 minute until the cream starts boiling. Remove the salted caramel from the heat and let it to cool down completly before using.
