Christmas Cake

Fruit mixture: 5 oz sweetened dried cherries
6 oz sun dried raisins
6 oz sweetened dried pineapples
6 oz sweetened dried cranberries
3 cups of red label wine or any red wine of your
choice
1 cup of Jamaican white rum or any white rum of
your choice. Blend in mixer for one more than 1
minute.
Other ingredients:
2 cups of brown sugar, 2 sticks of room temperate
butter, 5 cups of flour, 4 teaspoons baking powder, 2 teaspoons salt, 4 teaspoons nutmeg, 4 teaspoons cinnamon, 4 teaspoons allspice, 11 eggs, 2 tablespoons vanilla, 2 tablespoons lemon juice, 4 tablespoons of grace browning or browning of your choice.

Mix butter and brown sugar together, add lemon juice to eggs and add eggs to butter and sugar. Mix. Combine all dried ingredients into a bowl and lightly mix to combine all ingredients. Add dried ingredients to wet ingredients and mix. Add blended fruits and mix. Add vanilla and browning.

Grease baking pans and divide content into two 9 inch spring form pans

Bake at 325 for 1-1h 10 minutes.

Top with wine and rum after removing from oven.
