Cake ingredients:
1 cup all purpose flour
1/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/2 cup white sugar(more if needed)
1 egg
1/4 cup vegetable oil
1/2 tsp violet food color
1/2 tsp ube flavor
3/4 cup water
Ube mousse and topping:
3/4 cup all purpose cream, chilled overnight
1/3 cup condensed milk, chilled overnight
3 tbsp ube halaya
2 tsp gelatin, cleat and unflavored
1/8 cup hot water
Topping and filling:
80g white chocolate(or less)
1/3 cup ube halaya(more if needed)
Procedure:
1) Bring 1 liter of water to a boil
2) Ube Cake: Combine all purpose flour, baking soda, baking powder and salt
3) In a separate bowl combine water, egg, vegetable oil, sugar, violet food color and ube flavor
4) Combine wet and dry ingredients
5) Pour cake batter into the cake pan and tap few times to release air bubbles
6) Steam over med. low heat for 20-25min.
7) Cool cake in a pan for 5 min.
8) Remove cake from the pan and cool completely
9) Cool cake completely and cut the cake
10)Remove cake dome and set aside
11)Place the first layer of cake into the can
12)Spread ube halaya and place the other half of the cake on top
13)Ube Mousse:Dissolve gelatin into the hot water
14)Whip cream in high speed until doubled in size
15)Gradually add condensed milk and mix well
16)Add dissolved gelatin
17)Set aside some cream mixture for topping
18)Add ube halaya and mix well
19)Spread mousse mixture on top of the cake
20)Chill until it sets up
21)Shard: Melt white chocolate and let it cool down
22)Spread melted white chocolate on top
23)Chill until chocolate sets up
24)Add decorations: Cream topping and cake crumbs
25)Chill until ready to serve
