Epic Greek Tzatziki Cucumber Sauce

16oz / 454 gr Sour Cream
1 English Cucumber
2 tablespoons white wine vinegar
2 teaspoons salt
2 teaspoons garlic powder (or fresh garlic is even better)
2 teaspoons Dill
1 teaspoon Oregano
3 tablespoons Olive Oil (EVOO)

Peel and shred cucumber, add white wine vinegar and 2 teaspoons of salt and let it sit for 12 minutes. Mix the sour cream with all the other ingredients. Squeeze the shredded cucumber using a strainer to drain as much water out of it as you can. Mix into the sour cream mix.
Add salt and pepper to taste. Add another tablespoon white wine vinegar to taste.
Use English cucumber because they have tiny seeds compared to the very large seeds of regular cucumbers. You will not like the sauce with the large seeds in it. Refrigerate after finished.
*Please note - I made a mistake and I didn't realize it until I was editing this video - I said "sauerkraut" instead of "sour cream" at about the 12:20 time mark in this video!
