      What's For Dinner? #15 | Easy WW Meals | Weight Watchers | With Points on all Plans I show some of the easy, WW (Weight Watchers) friendly meals that we had this week. I also show the points for each meal on the green, blue and purple plans. I have linked the videos to the meals I have previously made videos on down below.       Cheesy Chicken and Broccoli Quinoa
      Makes 8 servings. MyWW SmartPoints per serving - Green: 9 SmartPoints / Blue: 8 SmartPoints / Purple: 5 SmartPoints.
      Ingredients:
      16 oz frozen broccoli, steamed
      1 cup dry quinoa, cooked
      8 oz diced, cooked chicken breast
      1 1/2 cup shredded low fat cheddar cheese
      2 cups skim milk
      1/3 cup greek yogurt
      2 Tbsp flour
      3 Tbsp light margarine or butter spread (I like Brummel and Brown) I only used 2 in this video but the roux was too dry so I would recommend 3.
      salt and pepper to taste
      Steam broccoli and set aside. Melt margarine in large pan on medium heat. Once melted, whisk in flour and cook for about a minute. Add milk and whisk well, continuing to cook on medium heat until it starts to thicken. Once thickened, add in quinoa, chicken and broccoli, stir well. Add in greek yogurt and about 1 cup of the cheese. Add pepper and salt to taste. Pour in a prepared casserole dish, top with remaining cheese and bake at 350 for about 20 minutes.
