Description

Banana cake
Break 3 eggs in a mixie jar
Half tspn vanilla essence /half tspn cardamom powder
A pinch salt
Blend in high speed for a minute
Frothy mixture
Half cup sugar
Blend again in high power for a minute
1 cup sunflower oil
Blend in high speed for a minute
Mixture turns semi thick
Transfer to a bowl
Chop and add 3 ripe kerala banana
Blend to smooth paste
Add it to the previously prepared mixture
Give a mix
Let's prepare dry mixture
Seive 2 cup wheat flour
1 tspn baking powder
1/2 tspn soda powder
Add half of the dry ingredients to wet mixture
Fold and mix
Do not vigorously mix
Do it slowly
Add the remaining dry ingredients and mix the same way
8 to 10 dates chopped and some tutti fruti
Dust with little flour, so that these doesn't settle down when mixed with batter
Add to cake and mix, do not over mix
Let's preheat pressure cooker
Add salt to base and level it
Place a stand
Close and preheat 10 mins in low medium flame
Let's grease cake tray
Dust with flour
Transfer batter to tray
Tap twice
Add tutti frutti or nuts or any dry fruit of ur choice on top
Transfer to cooker
Close and cook in medium - high flame for 30-40 minutes
Do not place whistle
After 40 minutes
Cake cooked well, insert toothpick and check, if completely cooked toothpick will come out clean
Take out and keep it to cool
Once cooled cut and enjoy
Cake is really soft and moist
