BAKED ONION RINGS - Recipe from 'My Vegan Italian Kitchen'
-Slice onions into 1/2 wide rings and set aside
-Make the wet dredge : in one bowl, mix 1 cup of flour with 11/2 cup of water
-Make the dry mixture: in another bowl, mix 2 cups of breadcrumbs with 2 teadspoon of salt. I added 1 teaspoon or italian seasonning and one teaspoon of paprika
-Dip one ring in the wet mix, tap off the excess , then dip in the breadcrumb making sure to coat well.
-Repeat for each ring and place on a baking tray.
-Brush all the coated rings with a touch of olive oil
-Bake at 450 degrees for about 10 minutes.
-Serve warm with sriracha mayo dip
BUFFALO TOFU BITES:
-Press tofu with paper towels (or tofu press) to get as much of the moisture out as possible
-Cut into cubes and repeat the same exact process as the onion rings above.
-Bake at 450 degrees for about 15-20 minutes.
-When ready to serve, toss the bites in 1/4 cup of vegan friendly wing sauce.
-Serve immediately with quick ranch (mayo+onion powder to taste)
NACHO SHEETPAN:
-Combine on a large sheetpan: nacho, ground round, lentils, black beans, corn kernels, sliced black olives and pickled jalapenos.
-Top with vegan cheddar cheese.
-Bake at 400 degrees for 15-20 minutes.
