Happy 2020 and welcome back to a simple vegan what i eat in a day full of easy simple plant based meal inspiration: Vegan Bulgur Lentil Bites, an Overnight Oat Bircher Müsli Bowl, Vegan Sugar Cookies, Tahini less Hummus and more!

INGREDIENTS:

#1 Overnight Müsli Bowl:

1/2 cup oats (45g)
1 tsp flax seeds
a pinch of salt
1/2 tsp cinnamon
2 heaping tbsp vegan vanilla yogurt
5 tbsp non dairy milk
a handful of raisins
a handful of hazelnuts, toasted

#2 Homemade Cig Köfte in Lettuce Wraps

75g red lentils, dried (½ cup minus 2 tbsp)
½ tsp vegetable broth powder
~ ¾ cup water to cook the lentils ( ~180ml)

1 cup extra fine bulgur or couscous, dried (170g)
1 cup + 2 tbsp boiling hot water (280ml)
1 onion
1 clove of garlic
oil for onion and garlic
1 ½ tbsp tomato purée
juice of 1 lemon, more to taste if needed
salt to taste
5-6 tbsp of cooked red lentils
a handful of parsley, fresh or frozen

lettuce wraps
hummus
more lemon juice for serving
*if you're using quinoa or millet instead make sure to actually boil it instead of just pouring the hot water on top, I know obvious but I wanted to clarify that haha

#3 Tahini Less Hummus or “Whipped Chickpeas”

1 can of chickpeas, rinsed and drained(220 - 240g)
2 ½ tbsp olive oil
2 tbsp oat milk
juice of ½ lemon
2 tsp agave
salt to taste
spices of choice to taste
fresh parsley, optional

#4 Vegan Sugar Cookies

*recipe adapted from a german vegan christmas baking cookbook

dry ingredients:
300g spelt flour or all purpose
100g powdered sugar
a generous pinch of salt
¼ tsp baking powder

wet ingredients:
150g vegan butter, cold and cut into cubes
4 tbsp aquafaba, chickpea water
3 tbsp non dairy milk
the zest of ½ lemon

Method:

combine all the dry ingredients
add the cold vegan butter
mix in the butter with a spoon first, then switch to you hands, mixing in the butter so you have little butter flakes distributed throughout the dry ingredients
add the aquafaba and non dairy milk
knead the dough with your hands quickly
form the dough into a ball of cookie dough
refrigerate the dough for 30 min while you preheat the oven to 170C and line 2 baking sheets with parchment paper
roll out the the dough on a floured surface
cut dough it into cute shapes using cute cookie cutters and place them onto the sheets
bake for about 12 minutes until slightly golden along the edges
let cool first, then add glaze if desired
