How to make tofu at home:

Ingredients:
Dough:
500 gr. wheat flour
60 ml olive or corn oil
130 ml warm water
120 dairy – free milk (use soy or coconut)
1 tsp. sea salt
1 tbsp. sugar
1 pack active dry yeast
Few drops of black gel food color
Burger patties:
400 to 500 gr. tofu
Potato starch
1 red onion
1 large tomato
Some fresh salad leaves
2 tbsp. peanut sauce
2 tbsp. tomato sauce
2 tbsp. black balsamic sauce
Chopped parsley and dill
Tomato Marinara sauce:
4 to 5 fresh tomatoes
1 large onion
2 to 3 garlic cloves
2 tbsp. tomato paste
2 tbsp. sugar
Olive oil for frying
1⁄4 tsp. smoked paprika
1⁄4 tsp. oregano
1⁄4 tsp. curry
Sea salt and ground black pepper
Juice of one orange
Juice of one lemon
100 gr. dry red juice
3 tbsp. vegetable protein sauce
2 tbsp. maple syrup
1 tsp. rice vinegar
Spicy balsamic sause:
3 tbsp. balsamic cream
1 tbsp. balsamic vinegar
1 tbsp. teriyaki marinade
1 tbsp. maple syrup
2 tbsp. sweet chili sauce
Orange peanut sauce:
2 tbsp. peanut butter
1 tbsp. hoisin sauce
1 tbsp. maple or agave syrup
2 tbsp. orange juice
1 tsp. sesame seeds
Method:
Tomato Marinara sauce:
Finely chop onion and garlic. Stir – fry into preheated frying pan with oil for 5 minutes. Season with salt and drizzle with rice vinegar. Add tomato paste, mix well and sprinkle with some sugar. Add chopped tomatoes and cook 10 minutes with stirring all time.
Pour in orange and lemon juice, wine, vegetable protein sauce and syrup. Mix well and cook up to 10 minutes. When sauce is thickens, season with salt, pepper, spices, give a good stir and cook it for some minutes more. Don’t forget to taste the sauce to make sure that all flavors are well balanced, or maybe it will need more spices or salt.
Remove from the heat and cool at room temperature.
Spicy Balsamic sauce:
Combine all ingredients in a bowl. Pour the prepared mixture into saucepan and cook over medium heat about 5 to 7 minutes. Remove from the heat, pour into bowl and completely cool.
Orange Peanut sauce:
Mix peanut butter with hoisin, add orange juice and syrup. Stir well until combine. Sprinkle with sesame seeds and done! Sauce is ready.
The next step is dough.
Line baking trays with greaseproof paper.
Combine water with sugar, add 1 tbsp. flour and yeast, mix well and set aside. Wait until mixture is well raised and double in size.
Sift flour into mixing bowl, add salt. Pour in yeast mixture, dairy – free milk and oil. Knead the dough by hands or stand mixer with hook attachment until the dough become smooth and elastic. Cover the mixing bowl with clean kitchen towel and set aside in warm place for about 1 hour.
After that divide dough in two parts and add to one black food coloring. Make two smooth balls. Divide each ball into 4 same sized pieces. Make balls again.
Put them on lined baking tray, grease with milk mixture (2 tbsp. coconut milk plus 1 tbsp. maple syrup), sprinkle with sesame seeds and set aside for 30 to 40 minutes.
Preheat oven to 180 °C (350 °F) and bake buns about 30 to 35 minutes.
Let’s cook tofu. Slice it in 2 flat pieces, dip each one in potato starch and fry into preheated frying pan with oil until nice golden.
Transfer to the plate lined with paper towels to remove oil.
Slice buns in half. Spread a nice layer of tomato sauce on top of one half and peanut sauce on other one.
Then put salad leaves, then tofu, drizzle with balsamic sauce, add tomato slices and onion circles. Sprinkle with chopped herbs on top and cover with another part of bun.
Repeat the same process with another bun and serve these delicious burgers with ice cold drinks!
