Lemon Pie Cobbler

This dessert combines a sweet tart lemon pie filling with a pour in batter cobbler. The combination is delicious!

Lemon Pie Filling
2 cups water
2 cups sugar
1 tsp salt
6 Tbsp corn starch
Juice of 2 lemons
1 lemon rind grated
4 egg yolks, slightly beaten
1 Tbsp butter

Cobbler batter
1 stick butter
1 cup flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup sugar
1 cup buttermilk
1 tsp vanilla extract
1 tsp lemon extract
