Instant Pot Low Carb Chicken Enchilada Casserole

This healthy and delicious Low Carb Chicken Enchilada Casserole recipe is easy to make in an Instant pot pressure cooker and tastes amazing. 6 Low Carb Chicken Enchilada Meal Prep Bowls - 304 calories per meal prep enchilada bowl, 7.6 grams of fat, 18 grams of carbs, 40 grams of protein.

INGREDIENTS
2 Lbs (32oz) Chicken Breast
3 Cups Green Enchilada Sauce
1 Medium Red Bell Pepper
1 Medium Red Onion
1 Cup Yellow Corn
2 Large Jalapenos
6 Carb Balance Low Carb Tortillas
1 Cup Mexican Style Four Cheese
1/4 Cup Chopped Fresh Cilantro

INSTRUCTIONS
Take out your Instant Pot pressure cooker and add the 2 lbs of chicken breast and 2 cups of green enchilada sauce. After that cover and cook on the chicken setting for 20 minutes.
After the 20 minutes shred the chicken with 2 forks. Next add the following ingredients: red bell pepper, red onion, yellow corn, and the chopped jalapeno. Cook for another 10 minutes.
Take out an oven pan and start making 6 enchiladas with the chicken mixture. After that, add 1 cup of enchilada sauce to the top. Finish, by adding 1 cup of shredded cheese to the top.
Preheat your oven to 350F. Bake for 20 minutes. Remove and let it cool down. Cut evenly into 6 pieces. Take out your meal prep containers and transfer them to your containers. Once ready to eat you can add fresh lettuce.
