Recipe details

Pan size used. 8'' square, lined with baking parchment. Baking temperature 200C.

Ingredients. Please weigh for best results. All ingredients at room temperature.

Apples, peeled and cored - 350 grams (you may need 500 grams whole apples for this recipe)
Maida - 65 grams
Salt - tiny pinch
Baking powder - 1 teaspoon
Eggs - 2 (100 grams, without shell)
Powdered sugar - 65 grams (use more if you like sweeter cakes)
Pure Vanilla extract - 2 teaspoons ( use 1 teaspoon if using synthetic vanilla essence)
Full fat milk - 1/4 cup plus 2 tablespoons / 90 ml
Unsalted butter - 28 grams, melted and cooled (but still liquid)
More powdered sugar for dusting on top (optional)

Method: Pre heat oven to 200C. Line an 8'' baking tin with parchment.
Peel, slice the apples using a mandolin slicer. Discard the core. Keep aside.
Sift together the flour, salt and baking powder twice. Keep aside.
In a large bowl, whisk the sugar, vanilla and eggs for 2 minutes until pale.
Stir in the milk and melted butter. Gently whisk in the flour mixture, make sure there are no lumps.
Fold in the apple slices using a silicone spatula. Transfer to the baking tin. Bake for 40-45 minutes or until the top is a light golden brown and a toothpick inserted in the center comes out clean.
Cool completely on a cooling rack.
Slice and serve with extra powdered sugar dusted on top if you wish.
Store airtight, should keep well for 2 days. The cake will be more moist a few hours after baking.

Please do share your feedback and pictures if you try the recipe.
