THIS DELICIOUS CHICKEN IS SERVED UP WITH SOME RICE, MASH POTATOES AND NSHIMA. NSHIMA IS A TYPE OF MAIZE FLOOR PORRIDGE MADE IN AFRICA. AND IT IS ALSO KNOWN AS UGALI, PAP, OBUCHIMA ETC) AND YOU ARE GOOD TO GO.

FOR THE MARINADE
1 Cup of Plain Yogurt
1 tbsp. of Lemon Juice
2 tbsp. of Tikka Masala
1 tsp of Turmeric
1 tsp of Red chili Powder
1 tsp of ground coriander powder
1 tbsp. of onion powder
1 tsp of garlic powder
1 tsp of salt and black pepper.
1 tsp of curry powder
You can use boneless chicken thighs or bone in Chicken. cut into bite side pieces
Combine all the ingredients in a bowl, cover and marinate overnight or minimum of 3 hours.
Prepare the big pan and add Clarified Butter and heat on Medium heat. Add chicken in batches, make sure you do not crowd the Pan.
Sear on all sides, creating a deep brown crust. Remove careful from the pan when done and wait for the Sauce.
FOR THE SAUCE
2tbsp of Butter
2 Cup of Tomato Sauce
1 tbsp. of Sugar
1 tsp of Ground Chili Powder
1 tsp of Tikka Masala
ketchup
1 tsp of sugar
1 tsp of onion powder
1tsp of cilantro
salt to taste
Continue to cook the tomatoes in to the Pan and add all the ingredients cook for 10 minutes and return the chicken to the Pan, bringing the mixture to a simmer. add the remining Heavy cream cook for about 15 to 20 minutes until the chicken is cooked though.
