How to make Chocolate Chip Scones

Ingredients
½ cup (3¾floz/115ml) milk.
½ cup (3¾floz/115ml) double cream.
1 teaspoon vanilla extract.
1 egg.
3½ cups (18oz/497g) all-purpose flour.
5 teaspoons baking powder.
¼ teaspoon salt.
½ cup (4oz/115g) cold butter, finely diced.
¼ cup (2oz/60g) granulated sugar.
1¼ cups (7½oz/213g) chocolate chips.
Method
1. Preheat the oven to 180°C/350°F/Gas Mark 4.
2. Line a baking sheet with parchment paper.
3. In a medium sized bowl, beat the milk, double cream, vanilla extract, and egg together.
4. In a larger bowl, whisk the all-purpose flour, baking powder and salt together.
5. Add the cold butter and rub into the dry ingredients until the mixture resembles fine breadcrumbs.
6. Add the sugar and chocolate chips and mix.
7. Pour the wet ingredients into the dry mixture and stir until the dough comes together.
8. Put the dough on a floured surface and knead gently until the dough forms a ball.
9. Pat the dough to a thickness of about 1½ inch.
10. Using a 2¾ inch biscuit cutter cut out circles and place on the baking sheet.
11. Place the scones in the refrigerator for 15 minutes to allow the dough to firm up.
12. Glaze the top of the scones with milk and bake for 15-20 minutes, or until the tops are golden.
13. Cool on the baking sheet for 5 minutes and transfer to a wire rack.
14. The scones are delicious with butter, jam and also very nice on their own.
15. You can store these scones in an airtight container at room temperature for up to 3 days.
16. Or freeze them for up to three months.
17. Defrost in a warm oven at 150°C/300°F/Gas Mark 2.
