Sourdough Bread Example
Description
This is my latest sourdough bread example. It is a really nice example, but I need a new razor to tidy up that top.
Nice crust, works well on a pizza stone.
Just to be clear mix for starter/ and repeat for feeding the dough... ( interchanged it on the video)
100ml water
200ml flour
10% rye
10% brown
80% white
-------------------------
Bread mix...
400g of the starter ferment
700g strong white flour
90g spelt/rye/brown in total
20g salt (2%)
650g water (maybe for me should have gone for 620g
Combine all ingredients - bowl dough hook mix for 10 mins (except salt as it inhibits the yeast)
Add salt and mix for 5 minutes more.
Rest for 1 hour in bowl with dusting of flour
Shape and put in baskets to rise for 16 hours
Pizza stone in oven at 240C
5mins at 240C (with steam spray)
25/30 minutes at 210C
